Ingredients

  • Cabbage head

Instructions

Prepare Cabbage for Wedges, Squares, Strips, and Shreds

  1. Peel outer layers
  2. Cut off the bottom where the root is to create a base
  3. Cut cabbage head in half, then half again, to create quarter segments
  4. Cut the core from each segment by placing them vertically, and making diagonal cuts toward the base at about a 45° angle

Wedges

  1. Cut each segment in half lengthwise. If you need bigger wedges, you do not need to cut each segment in half.

Squares

  1. With each quarter segment, make one or two cuts lengthwise.
  2. Holding the cut pieces together, rotate the segment 90° so that you can make perpendicular cuts.
  3. Cut crosswise from one end to the other at about 1-inch intervals

Strips

  1. Place segment parallel to your knife and make thin slices with long knife strokes

Shred With A Knife

  1. Turn a segment oriented perpendicular to your knife
  2. Make very thin, fine slices from one end to the other

Shred With A Mandoline

  1. Hold segment of cabbage vertically against mandoline
  2. Push segment of cabbage against mandoline blade, and back
  3. Be mindful of your fingers or use your mandoline’s guard

Shred With A Peeler

  1. Place a segment of cabbage on your cutting board with a flat side down, and start shaving from the top of an end down toward the cutting board.
