- Rinse the green onions thoroughly under cold water to remove any debris.
- Remove any wilted, brown, or slimy tops and outer layers by hand
- With a sharp knife, trim off the onion bottoms just above the roots.
- Holding the green onions in place with your non-dominant hand, and using your knuckles as a guard, slice the green onions into rounds. Position the knife perpendicular to the product when cutting. Cut with a circular rocking motion, so the knife slices through the onions rather than crushing them.
An Optional Modification
If you prefer an angled bias cut, rather than rounds, position the product so that it is angled down towards your cutting hand. This way your knife should cross the product at a non-right angle. It will shape the cuts with a nice angular presentation!
Notes
Divide the onion greens (tops) and whites (bottoms), and select the most appropriate parts for your intended use. Also, be sure to use a sharp knife. You’ll want the blade to slice cleanly through the product rather than crushing it.
