How To Peel Mushrooms
- Remove the woody stem.
- Pinch the overhang from the underside of the mushroom and peel backward toward the top of the round cap.
- Continue around the entirety of the mushroom until there is no hem-like overhang left on the gill side of the mushroom and the cap is completely peeled and clean.
How To Clean Mushrooms
Bowl Method
- Fill a bowl with cold water.
- Add mushrooms to the bowl.
- Gently wipe off any dirt or debris from the mushrooms with your fingers.
- Remove your hands from the bowl and give the water a moment to still. The dirt will settle on the bottom of the bowl.
- Remove the mushrooms from the water and pat dry with a paper towel or dry them in a salad spinner.
Colander Method
- Fill a colander with mushrooms.
- Rinse mushrooms under cool running water, shaking the colander as you do so to dislodge any dirt or debris.
- Gently rub off any remaining dirt from the mushrooms with your fingers.
- Turn mushrooms onto a paper towel and pat dry, or toss them in a salad spinner.
Optional: Remove Gills
- Remove the stem.
- Scrape out the gills of the mushroom by dragging a spoon across them.
How To Cut Mushrooms
Quarters
- Remove or trim the stem.
- Cut the mushroom in half lengthwise.
- Cut each mushroom piece in half again.
Slices
- Remove or trim the stem.
- Create ¼ inch slices along the entirety of the mushroom, through the stem if it is still attached.
Dice
- Remove or trim the stem.
- Create ¼ inch slices along the entirety of the mushroom, through the stem if it is still attached.
- Stack a few mushroom slices at a time and cut them into ¼ in slivers.
- Cut those slivers into a dice by cutting every ¼ inch perpendicular to the previous cuts.
